Fact for the Day:

Breeding Animals for food is a leading cause of air pollution.

 

Air quality has been largely absent from discussions about the health and environmental impacts of food. But recent findings estimate that 80% of the 15,900 annual deaths in the United States that result from food-related fine particulate matter (PM2.5) pollution are attributable to animal-based foods.

 

The report also states that dietary shifts toward more plant-based foods that maintain protein intake and other nutritional needs could reduce agricultural air quality–related mortality by 68 to 83%. Read the full article by National Geographic here.

 

Bonus Tip: Batch cooking saves time in the kitchen.

Continuing with the theme from yesterday, i.e. how to cut down on time spent cooking and cleaning when we shift to plant-rich eating, this is where we say… Batch cooking to the rescue! If you’re someone who is very limited on time to cook, give batch cooking a try.

What is batch cooking? Here’s a great definition from The Food Revolution Network:

“Batch cooking is simply the act of preparing and/or cooking larger portions of different foods, meant to be mixed and matched to create versatile meals throughout the week. It’s typically done on a Sunday, to prepare for the week ahead. While it will generally take about one and a half to two hours on the weekend, during the week, when you are simply pulling out meals to reheat or put the finishing touches on, you’ll forget the time you spent cooking it on Sunday and feel like you have a Fairy Food Mother coming to the rescue to save you from crappy takeout.”

Once you get the hang of batch cooking, you always have something delicious and nutritious in the refrigerator, ready to eat or ready to be mixed and matched with other ingredients for a satisfying meal.

Speaker Series Day 6 – Dr. Sailesh Rao

The Surprising Truth Behind the Leading Cause of Climate Change

Dr. Rao worked on the internet communications infrastructure for 20 years before switching careers and founding the environmental non-profit – Climate Healers.

In a deep and thought-provoking presentation, he explains how some simple switches in our world view can address climate change, environmental degradation, and build more just and sustainable societies.
